loadonce work only with the predefined loaders. If you use datatype as function you should set datatype:local manually after the first loading of the grid with the custom function. Something like:

datatype : function (){

$.ajax({

…

complete :function (…){

…..

$(“#mygrid”).setGridParam({datatype:'local'});

}

})

},
