Sorry, we do not provide detailed server side examples, (in your case php) since jqGrid is undependend from the underliyng database and server side scripting language. The demos (in php) just demostarte the the features, and they do not give a receipt what you should do.

Look at sortableColumns method in grid.jqueryui.js
You can add your own options via sortable.options options in the grid. Here you can define all available optins for sortable UI widget – if I understand right
