I followed the steps that you provided and found following issues on win10 version 1909(OS build 18363.476 ) :
1. Screen reader is reads only the column headers name when focus is on any cell inside the body. It does not read the cell value. Like Country USA, it reads only Country
2. When focus is on the header Narrator does not read the ascending\descending state for the header.
Observed above issues does not exists on older Win 10 version 1803(OS build 17134.829)

Yes, I can see aria-sort property added now this should fix the sorting issue.
For the issue related to headers.
1. Narrator not providing the header names associated with the table cell
Did you try with aria-label or aria-labelledby properties or headers attribute on the cells this will help to associate the header names with the cell values. If not please give a shot to this.

Again highlighting the issues with the grid using Narrator :
1. Narrator not providing the header names associated with the table cell.
2. Table not accessible using Narrator table commands.
3. Screen reader is not reading the column sorting information.
Can you please let me know if you have any plan to fix above issues ,it would be great if you can share the tentative release dates and version.

I was trying to run screen reader: Narrator observed that it is not working and the documentation you shared does not speak anything about the screen reader compatibility of this component.
